A rare product with a limited amount, it is only produced by about fifteen producers. From June to October, only 100 days a year, the cows enjoy the luscious grass of the pastures instead of being fed hay-like winter.
The Beaufort appellation “Chalet d´Alpage” is a guarantee of quality and tradition. It must be produced at a minimum altitude of 1500m, with milk from a single herd and made immediately after milking twice a day!
At this altitude grows a radically different flora (particularly the gentian), giving it its unique scent.
